私が旅してインスパイアされたバスクの食文化をモダンに表現。東海地方はバスク地方に似て、海と山が近く四季折々の豊かな食材が揃う恵まれたテロワール。知多半島の柑橘や豊浜漁港の鱧、岐阜東農園のパプリカや郡上の鮎、飛騨牛の雌牛、三重桑名のハマグリやたけのこ、尾鷲漁港のマハタや松坂牛。これらの豊富な食材をピンチョスや薪の香る調理法で伝統的且つ現代風に表現します。
パリやリヨンで学んだフレンチの技術と感性でモダンバスクガストロノミーに仕立てます。地上180mからの絶景と共に小さなバカンスをお楽しみください。

I expressed the food culture of Basque, which was inspired by my travel, in a modarn way.
Similar to the Basque Country, the Tokai region is a blessed terroir with a rich variety of seasonal ingredients, with the sea and mountains close by. Citrus fruits from the Chita Peninsula, hamo(pike conger)from the Toyohama fishing port, bell peppers from Gifu Higashi Farm, sweetfish from Gujo, Hida beef, clams and bamboo shoots from Mie Kuwana, mahata grouper from Owase fishing port, and Matsusaka beef.
These abundant ingredients are presented in a traditional and modern way with pintxos and the aroma of firewood.
The French techniques and sensibilities learned in Paris and Lyon are used to create a modern Basque gastronomy. Enjoy a small vacation with a spectacular view from 180 meters above the ground.
